The Manila clam (Ruditapes Philippinarum) is distinguished by the tenderness of its meat and its sweet and saline flavor. It is also distinguished by its symmetrical shells and by having more marked radial and concentric lines than those of the fine clam. Its shell is much thicker and harder than that of other clams. The siphons are joined halfway and their color varies between gray and black. The Manila clam provides us with significant amounts of iron, potassium and vitamins A, B3 and B9.
Marconil clams are grown in the cold waters of the Atlantic that bathe the Gulf of Cádiz, a few kilometers from the Strait of Gibraltar, the marine corridor where the Atlantic Ocean and the Mediterranean Sea meet, an area world-renowned for the great quality of its waters and for Almadraba, an ancient art of fishing for tuna that migrate to the Mediterranean.
The farming of our clams begins with the best French breeders located in the Gulf of Morbihan and in the Marennes-Oléron basin and the north of the United States, areas world-renowned for the quality of their bivalves.
MarConil clams are farmed in the open sea, 4 nautical miles from the coast. The waters that bathe them have the health rating of “zone A”, the highest that exists in the farming of aquaculture species, which ensures production with the highest standards of food quality since due to the high quality of the waters where we grow them, our clams do not need purification.
The purity of the water, the handling process and the artisanal packaging under the strictest hygiene conditions ensure that the clams reach our customers as if they had just been taken from the sea.
We carry out weekly checks with the Junta de Andalucía to guarantee maximum quality.

At Marconil we care about maintaining the freshness and quality of our clams. They are carefully packaged and refrigerated to guarantee that they arrive at your home in the best condition. We recommend that you consume them within 5 days of receiving them to enjoy their maximum flavor and freshness.
We must respect the cold chain as much as possible and not have them at room temperature, refrigerating them as soon as they arrive at our restaurant or our home. It is advisable to keep the Manila clams in the same mesh in which we package them since by being tight together, we will prevent them from opening and therefore they will last longer in the least cold part of the refrigerator. As an additional measure we can wrap them in a damp cloth, tightly closed.
To clean them, you just have to rinse them well under running tap water, in a colander and rubbing them gently. It is time to identify those that are broken or dead, to discard them.
